"The Chamber is very excited about the concept," Chamber President Angie Schaefbauer said.
As a rule of thumb, it takes a gathering of at least 1,000 people to make it worth the trip for food trucks, according to Fiske.
"The restaurants are going to want a say in this," Levy
"I think if more food trucks knew that they are welcome in Richfield currently, they'd be here," Fiske said, "but nobody's here."
Food trucks eye the suburbs
Addressing concerns over competition with restaurants, she added, "If you don't park right in front of Broadway Pizza, I think you'll be OK."
At least two food trucks have signed on for this year's July 4 celebration, according to Parks and Recreation Director Jim Topitzhofer.
Staff and policymakers might see what an expanded food truck presence would look like this September, the month Mayor Debbie Goettel is targeting for a possible food truck fair to raise funds for the Richfield Foundation. Twenty to 25 trucks could gather at Veterans Park for the event, Goettel added.
With all the redevelopment and "revitalization" occurring in Richfield, the timing is right to embrace food trucks, Fiske said, arguing they may provide the city a competitive advantage. Edina does not allow food trucks, and according to Fiske they have a low profile in Bloomington. Looking at the other end of the spectrum, Fiske cited Burnsville as a new destination for food trucks due to its welcoming policies.
"We would love to have a presence here in Richfield," Levy said.

As food truck operators expand into suburban markets, city leaders are considering establishing a formal policy and licensing procedure for the mobile culinary trend. Spurred on by a shaved ice vendor and Mayor Debbie Goettel, the Richfield City Council used a Tuesday, May 13, study session to discuss the topic. Likewise, Fiske made his own promise not to "park my shaved ice truck in front of Dairy Queen."
"We have a number of events when we're overwhelmed with the number of people and not enough food," Fitzhenry said.
Large gatherings such as Penn Fest in September and the city's Fourth of July celebration may have the capacity to accommodate that desire. Nevertheless, the Richfield Chamber of Commerce is endorsing the city's initial foray.

"The reason I feel strongly about having food trucks in Richfield is I see trucks passing Richfield and going to Burnsville," Fiske said, "because Minneapolis has gotten so restrictive in some of their ordinances that now food trucks are leaving."
